Ingredients
  

For the Pasta
  • 8 oz Pasta Use your favorite shape such as bow ties or penne.
For the Sauce
  • 1 cup Pumpkin Puree Be sure it's 100% pumpkin.
  • 1 tbsp Fresh Sage Chopped.
  • 2 tbsp Olive Oil Can substitute with avocado oil.
  • 1 medium Onion Diced, yellow or white.
  • 2 cloves Garlic Minced, fresh garlic preferred.
  • 1 cup Vegetable Broth Opt for low-sodium varieties.
  • 1 cup Plant-Based Milk Almond, oat, or cashew milk.
  • to taste Salt
  • to taste Pepper Freshly cracked black pepper preferred.
For Topping
  • 1/4 cup Pine Nuts Toast for extra flavor.

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a boil over high heat. Add pasta and cook according to package instructions for 7-10 minutes. Reserve a cup of pasta water, drain, and set aside.
  2. Preheat oven to 350°F (175°C). Spread pine nuts on a baking sheet and toast for 7-10 minutes until golden brown.
  3. In a large skillet, heat olive oil over medium heat. Sauté diced onion for 7-10 minutes until translucent. Add minced garlic and cook for an additional 30 seconds until fragrant.
  4. Reduce heat to low, stir in sage, vegetable broth, pumpkin puree, and plant-based milk. Simmer for 7 minutes, stirring occasionally. Season with salt and pepper to taste.
  5. Add drained pasta to the skillet and toss to coat with the sauce. If too thick, incorporate reserved pasta water gradually.
  6. Serve the pasta in bowls topped with toasted pine nuts and additional sage leaves if desired.
