Step-by-Step Instructions for White Bolognese Sauce
- Heat 2 tablespoons of olive oil in a large pan over medium heat. Add 1 finely chopped onion, 1 grated carrot, and 1 diced celery stalk. Sauté for 5-7 minutes until softened and onion is translucent.
- Increase heat and add 1 pound of ground meat. Brown for 8-10 minutes, breaking it into small pieces until no longer pink.
- Reduce heat to medium-low and add in 1/2 cup of white wine, scraping the pan. Let simmer for 3-5 minutes until liquid thickens.
- Pour in 1 cup of milk or heavy cream, add a pinch of nutmeg, and season with salt and pepper. Simmer for 30-45 minutes, stirring occasionally.
- Stir in 1/2 cup of freshly grated Parmesan cheese, cooking for another 2-3 minutes until cheese melts.
- Serve over wide pasta like pappardelle or fettuccine, garnished with additional Parmesan and cracked pepper.

Notes
Simmer longer for richer flavor. Use fresh ingredients for the best results. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for 3 months.
