  • 1 cup milk or heavy cream or coconut milk for dairy-free
  • 1 pinch nutmeg freshly grated preferred

Step-by-Step Instructions for White Bolognese Sauce
  1. Heat 2 tablespoons of olive oil in a large pan over medium heat. Add 1 finely chopped onion, 1 grated carrot, and 1 diced celery stalk. Sauté for 5-7 minutes until softened and onion is translucent.
  2. Increase heat and add 1 pound of ground meat. Brown for 8-10 minutes, breaking it into small pieces until no longer pink.
  3. Reduce heat to medium-low and add in 1/2 cup of white wine, scraping the pan. Let simmer for 3-5 minutes until liquid thickens.
  4. Pour in 1 cup of milk or heavy cream, add a pinch of nutmeg, and season with salt and pepper. Simmer for 30-45 minutes, stirring occasionally.
  5. Stir in 1/2 cup of freshly grated Parmesan cheese, cooking for another 2-3 minutes until cheese melts.
  6. Serve over wide pasta like pappardelle or fettuccine, garnished with additional Parmesan and cracked pepper.
