Step‑by‑Step Instructions
  1. Begin by rinsing the cod fillets under cold water and patting them dry with a clean kitchen towel. Season both sides generously with salt and pepper.
  2. In a medium-sized mixing bowl, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, dried oregano, paprika, salt, and pepper. Mix thoroughly.
  3. In a separate bowl, whisk together the mayonnaise, Dijon mustard, and lemon juice until smooth and creamy.
  4. Using a pastry brush, spread the mayonnaise mixture onto one side of each cod fillet and then press into the breadcrumb mixture.
