  • 1 cup uncooked chickpeas Soaked for 24 hours
  • ½ cup chopped shallot or yellow onion Milder taste with shallots
  • 3 cloves garlic Increase for more flavor
  • 1 teaspoon lemon zest Lemon juice can be a backup
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander Can substitute with extra cumin
  • ¾ teaspoon sea salt Adjust according to taste
  • ¼ teaspoon cayenne pepper Omit or reduce for milder flavor
  • ¼ teaspoon baking powder For light, fluffy texture
  • 1 cup chopped fresh cilantro leaves and stems Substitutable with other fresh herbs
  • 1 cup chopped fresh parsley leaves and stems Feel free to swap with favorite herbs
  • 1 tablespoon extra-virgin olive oil Plus more for drizzling

Method
 

Step-by-Step Instructions
  1. Soak 1 cup of uncooked chickpeas in a large bowl of water for at least 24 hours. Drain and rinse the chickpeas under cold water.
  2. In a food processor, combine the soaked chickpeas with all other ingredients and pulse until well combined but not pureed.
  3. Shape the mixture into small patties or balls using a scoop or your hands.
  4. Preheat oven to 400°F (200°C), line a baking sheet with parchment paper, place falafel patties, drizzle with olive oil, and bake for 14 minutes. Flip and bake for an additional 10-12 minutes.
  5. Remove from oven, let cool slightly, and serve in warm pita bread with veggies and tahini sauce.
