Ingredients
  

For the Tzatziki Sauce
  • 1 medium Cucumber Use English cucumber; drain overnight.
  • 1 cup Greek Yogurt Low-fat can be used.
  • 2 cloves Garlic Mince finely.
  • 2 tablespoons Olive Oil Extra virgin provides richness.
  • 1 tablespoon White Vinegar Can substitute with lemon juice.
  • 1 teaspoon Salt Kosher or sea salt recommended.
  • 2 tablespoons Fresh Dill Mint can be used as an alternative.
For the Falafel
  • 1 cup Dried Chickpeas Soak overnight.
  • 1 medium Red Onion Chopped.
  • 2 teaspoons Ground Cumin Essential for flavor.
  • 1 teaspoon Paprika Powder Smoked paprika for depth.
  • 1 cup Fresh Parsley Chopped.
  • 1/4 cup All-Purpose Flour Chickpea flour for gluten-free.
  • 1 teaspoon Baking Powder Use sparingly.
  • 2 tablespoons Sesame Seeds Skip if allergic.
For the Wrap
  • 2 cups Canola Oil For frying.
  • 4 large Tortilla Wraps Whole wheat or corn.
  • 2 cups Shredded Lettuce Crunchy base.
  • 1 cup Pickled Red Cabbage Adds tang.
  • 1 cup Cherry Tomatoes Halved.

Method
 

Preparation
  1. Grate the cucumber, sprinkle with salt, and drain overnight.
  2. Mix drained cucumber with yogurt, garlic, olive oil, vinegar, salt, and dill. Refrigerate.
Falafel Making
  1. Drain and dry soaked chickpeas. Blend with onion, garlic, cumin, paprika, parsley, salt, and pepper.
  2. Add flour, baking powder, and sesame seeds, mix, cover, and refrigerate for 1 hour.
  3. Heat oil to 350°F. Shape falafel mixture and fry until golden brown.
Assembly
  1. Warm tortillas, layer lettuce, cabbage, falafel, tomatoes, and tzatziki, then roll tightly.
