Preparation
- Grate the cucumber, sprinkle with salt, and drain overnight.
- Mix drained cucumber with yogurt, garlic, olive oil, vinegar, salt, and dill. Refrigerate.
Falafel Making
- Drain and dry soaked chickpeas. Blend with onion, garlic, cumin, paprika, parsley, salt, and pepper.
- Add flour, baking powder, and sesame seeds, mix, cover, and refrigerate for 1 hour.
- Heat oil to 350°F. Shape falafel mixture and fry until golden brown.
Assembly
- Warm tortillas, layer lettuce, cabbage, falafel, tomatoes, and tzatziki, then roll tightly.
