- Pat the chicken thighs dry with paper towels. Mix olive oil with cumin, turmeric, paprika, salt, and pepper in a bowl. Rub the mixture all over the chicken and let it rest for 10 minutes.
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper. Place a wire rack on top and lay the seasoned chicken skin-side up on the rack.
- Roast the chicken in the oven for 30-40 minutes or until the skin is golden brown and crispy. Ensure the internal temperature reaches 165°F (74°C).
- While the chicken is baking, combine Greek yogurt, minced garlic, and a pinch of salt in a bowl. Stir until smooth and refrigerate.
- If the chicken skin isn't crispy enough, broil for 2-3 minutes until the skin crackles. Serve with the garlic yogurt sauce.
