  • 4 large hard-boiled eggs finely chopped
  • 1 cup breadcrumbs panko is a great alternative
  • 1 cup cheese grated, cheddar or mozzarella
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 2-3 tablespoons butter for frying, or olive oil
  • 1/2 cup flour for coating
  • 2 large eggs beaten, for coating
  • 1 teaspoon seasonings salt, pepper, and paprika

Step-by-Step Instructions
  1. Begin by finely chopping the hard-boiled eggs and set aside.
  2. Heat a skillet over medium heat and sauté the finely chopped onion and minced garlic in butter until soft, about 3-4 minutes.
  3. In a large mixing bowl, combine chopped hard-boiled eggs, sautéed onion, garlic, breadcrumbs, grated cheese, and seasoning blend.
  4. Take a portion of the mixture and shape it into cutlets, about half an inch thick.
  5. Dredge each cutlet in flour, then dip into beaten eggs, and roll in breadcrumbs.
  6. In a skillet, heat butter or olive oil over medium heat and fry cutlets for 3-4 minutes on each side until golden brown.
  7. Remove cutlets from skillet and place on paper towels to drain excess oil.
  8. Serve hot, preferably with sour cream or your favorite sauce.
