Method
 

Cooking Steps
  1. Preheat your oven to 400°F (200°C). Butterfly and flatten the chicken breasts to about ½ inch thick. Season with salt and pepper.
  2. Crush the salted pretzels in a food processor until fine, then mix in paprika, salt, and pepper.
  3. Set up a breading station with beaten eggs and the pretzel mixture. Dredge the chicken first in egg, then coat in pretzel mixture.
  4. Heat ½ inch of vegetable oil in a skillet over medium-high heat. Fry the breaded chicken for 3-4 minutes per side until golden brown.
  5. In a saucepan, melt butter and whisk in flour. Gradually add milk and whisk until thickened, about 3-5 minutes.
  6. Remove from heat, stir in cheese and mustard until melted. Adjust seasoning with cayenne, salt, and pepper.
  7. Plate the chicken, drizzle with sauce, and garnish with parsley and onion slices.
