Ingredients
  

For the Salad
  • 4 cups fresh broccoli florets
  • 1 can chickpeas drained and rinsed
  • 1 small red onion chopped
  • 1/2 cup slivered almonds
  • 1 cup vegan feta crumbled
  • 1/2 cup Medjool dates chopped
  • 1 tablespoon fresh dill chopped
  • 1 tablespoon fresh mint chopped
For the Dressing
  • 1/4 cup olive oil
  • 2 cloves garlic minced
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon lemon zest
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 tablespoon maple syrup optional
  • 1 teaspoon sea salt adjust to taste
For Seasoning the Chickpeas
  • 1 teaspoon cumin
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground ginger

Method
 

Step-by-Step Instructions
  1. Prepare the dressing by whisking together garlic, lemon zest, lemon juice, olive oil, balsamic vinegar, Dijon mustard, maple syrup, sea salt, and pepper in a medium bowl. Aim for a smooth, emulsified consistency.
  2. Preheat the oven to 400°F (200°C) and grease a large baking sheet with olive oil.
  3. Spread broccoli on one side of the baking sheet and chickpeas on the other. Season chickpeas with cumin, cinnamon, ginger, olive oil, sea salt, and pepper. Roast for 15–20 minutes.
  4. Check the broccoli. If it's done, remove it; if not, toss the chickpeas with red onion and return to the oven for another 5 minutes.
  5. In a large bowl, combine roasted broccoli, chickpeas, red onion, slivered almonds, vegan feta, Medjool dates, dill, and mint. Drizzle with the dressing and toss gently.
  6. Serve garnished with lemon zest and extra lemon juice if desired. Enjoy warm or at room temperature.

Notes

Dry chickpeas well before roasting. Spread them in a single layer to achieve crispiness. Use fresh herbs for better flavor.
