Base
  • 1 head Cauliflower
  • 2 medium Zucchini or yellow squash
  • 1 cup Bell Peppers any color
  • 2 cups Spinach fresh, can use frozen if drained
Creamy Mix
  • 8 oz Cream Cheese can substitute with Greek yogurt
  • 1 cup Cheese (cheddar or mozzarella) can use vegan cheese
Flavor
  • 1 tbsp Italian Seasoning or fresh herbs
  • 2 tbsp Olive Oil can substitute with avocado oil or butter

Method
 

Cooking Steps
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat and sauté zucchini and bell peppers for 5-7 minutes until softened.
  3. Stir in cauliflower florets, cooking for another 5 minutes until slightly tender.
  4. Add fresh spinach and stir until it wilts down, about 2-3 minutes.
  5. Remove from heat and mix in cream cheese, Italian seasoning, salt, and pepper until well combined.
  6. Grease a medium-sized casserole dish with olive oil and transfer the vegetable mixture to it, spreading evenly.
  7. Sprinkle shredded cheese over the top of the casserole mixture.
  8. Bake in the oven for 25-30 minutes until the cheese is bubbly and golden brown.
  9. Let the casserole cool for a few minutes before serving.
