- Preheat your oven to 350°F (176°C) and line a baking sheet with parchment paper.
- In a food processor, combine the dry ingredients: nutritional yeast, garlic powder, sea salt, unbleached all-purpose flour, oat flour, yellow cornmeal, and baking powder if you're using it. Pulse on high for about 30 seconds.
- Add your choice of olive oil or vegan butter to the dry mixture in the food processor. Pulse together for about 15 seconds.
- Gradually pour cold water into the food processor, one tablespoon at a time, while pulsing the mix until a loose dough forms.
- On a lightly floured surface, shape the dough into a disc and roll it out to approximately 1/8 inch thickness.
- Using a sharp knife or pizza cutter, cut the rolled-out dough into small squares and transfer them onto the baking sheet.
- Bake your Vegan Cheez Its in the preheated oven for 12-17 minutes, or until they are puffed up and golden brown.
- After removing from the oven, let the Vegan Cheez Its cool on the baking sheet for about 5 minutes before transferring to a wire rack.
