Ingredients
  

For the Fritters
  • 1 large zucchini grated, squeeze out excess water
  • 0.25 cup carrots grated, or any mild vegetable
  • 0.25 cup red onion finely chopped, or substitute with green onions
  • 2 cloves garlic grated
  • 2 tablespoons chia seeds mixed with 5 tablespoons water for vegan binder
  • 0.25 cup fresh parsley chopped, or substitute with cilantro
  • 1 cup corn kernels fresh or frozen, rinsed and drained
  • 0.5 cup cornmeal adds crunch, chickpea flour is an alternative
  • 0.5 cup all-purpose flour chickpea flour as gluten-free option
  • 2 teaspoons baking powder
  • 1 teaspoon salt adjust according to taste
  • 0.5 teaspoon white pepper adjust according to taste
  • 0.25 teaspoon black pepper adjust according to taste
  • vegetable oil enough to coat skillet for frying

Method
 

Step-by-Step Instructions
  1. Grate one large zucchini and place in a clean kitchen towel. Squeeze out excess moisture and set aside.
  2. Grate ¼ cup of carrots and finely chop ¼ cup of red onion. Set aside in a bowl.
  3. Combine 2 tablespoons of chia seeds with 5 tablespoons of water in a small bowl and let it sit for about 5 minutes until thickened.
  4. In a mixing bowl, combine the squeezed zucchini, grated carrots, chopped red onion, 1 cup of corn kernels and 2 cloves of grated garlic. Add the prepared chia egg and mix.
  5. Add ½ cup of cornmeal, ½ cup of all-purpose flour, 2 teaspoons of baking powder, 1 teaspoon of salt, ½ teaspoon white pepper, and ¼ teaspoon black pepper. Gently fold together.
  6. Shape the mixture into ping pong-sized balls and flatten them into fritters of about ½ inch thickness.
  7. Heat vegetable oil in a skillet over medium heat. Fry fritters for 3-4 minutes on each side until golden brown and crispy.
  8. Transfer fried fritters to a wire rack or a plate lined with paper towels to drain excess oil and sprinkle with salt. Serve warm.
