- Start by coating your slow cooker’s ceramic insert with cooking spray to prevent sticking. Set the cooker to high to preheat it while you gather and prepare the other ingredients.
- In the warming slow cooker, add chicken stock, minced garlic, cumin, oregano, salt, and crushed red pepper. Place thawed chicken breasts on top and gently stir.
- Cover your slow cooker with the lid and set it to cook on low for 6-8 hours or on high for 3-4 hours.
- Once the cooking time is up, carefully remove the chicken from the slow cooker using tongs and shred it on a cutting board.
- Stir in drained Great Northern beans, drained Shoepeg corn, lime juice, and chopped cilantro, warming the chili for about 10 minutes.
