Step-by-Step Instructions
  1. Start by coating your slow cooker’s ceramic insert with cooking spray to prevent sticking. Set the cooker to high to preheat it while you gather and prepare the other ingredients.
  2. In the warming slow cooker, add chicken stock, minced garlic, cumin, oregano, salt, and crushed red pepper. Place thawed chicken breasts on top and gently stir.
  3. Cover your slow cooker with the lid and set it to cook on low for 6-8 hours or on high for 3-4 hours.
  4. Once the cooking time is up, carefully remove the chicken from the slow cooker using tongs and shred it on a cutting board.
  5. Stir in drained Great Northern beans, drained Shoepeg corn, lime juice, and chopped cilantro, warming the chili for about 10 minutes.
