  • 1/4 cup Fresh Herbs E.g., cilantro or parsley
For the Dressing
  • 1/4 cup Rice Vinegar Adjust to taste
  • 2 tablespoons Tamari Or soy sauce
  • 1 tablespoon Sesame Oil Can substitute with olive oil
  • 1 tablespoon Maple Syrup Can substitute with honey
  • 1 clove Garlic Minced, fresh is best
  • 1 teaspoon Ginger Freshly grated preferred
  • 1 pinch Chili Crunch Or substitute with sriracha
  • to taste Salt

Method
 

Step-by-Step Instructions
  1. Wash and dry the cucumbers, slice into thin rounds or cubes.
  2. If using frozen edamame, cook according to package instructions and let cool.
  3. In a bowl, whisk together rice vinegar, tamari, sesame oil, maple syrup, garlic, ginger, chili crunch, and salt.
  4. In a large bowl, combine cucumbers, edamame, and herbs. Stir gently.
  5. Drizzle dressing over the salad and toss gently until coated.
  6. Let the salad marinate for at least 10 minutes before serving.
  7. Serve cold or at room temperature, enjoy!
