  • 1 cup unsalted butter softened
  • 1.5 cups granulated sugar or brown sugar for richer taste
  • 3 large eggs room temperature
  • 1 teaspoon clear vanilla extract
  • 2 cups all-purpose flour or gluten-free flour
  • 1 teaspoon baking powder
  • 1 cup milk or dairy alternative
Surprise Filling
  • 12 mini Cadbury Creme Eggs or substitute with other chocolate candies
Frosting
  • 1 cup unsalted butter softened
  • 4 cups powdered sugar adjust to taste
  • as needed tablespoons milk for consistency

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C). In a large mixing bowl, cream together unsalted butter and granulated sugar until light and fluffy.
  2. Add in the room temperature eggs one at a time, mixing well after each addition. Blend in the clear vanilla extract.
  3. Gradually mix in all-purpose flour alternating with the milk until just combined.
  4. Line a cupcake tin with paper liners and spoon half of the batter into each liner.
  5. Press a mini Cadbury Creme Egg into the center of each batter-filled liner, then cover with remaining batter.
  6. Bake for 15-20 minutes or until a toothpick inserted comes out clean, then cool in the tin for a few minutes.
  7. Allow the cupcakes to cool completely. For frosting, beat unsalted butter until fluffy, gradually adding powdered sugar and milk until desired consistency.
  8. Frost the cupcakes with the colorful buttercream and add festive decorations as desired.
