Baking Cookies
- Preheat your oven to 375°F (190°C) and line cookie sheets with parchment paper or silicone mats.
- Melt ½ cup of butter in the microwave for about 45 seconds.
- Stir in ¾ cup of brown sugar and ½ cup of granulated sugar until fully combined.
- Add 1 teaspoon of vanilla extract and 2 large eggs, mixing until smooth.
- In a separate bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking soda, and ½ teaspoon of salt. Stir into the wet ingredients until a thick dough forms.
- Fold in 1 cup of butterscotch chips into the cookie dough.
- Drop rounded balls of the cookie dough onto prepared sheets, spaced 2 inches apart.
- Bake for 9 minutes or until edges are slightly golden.
- Let cookies cool on the pan for 1-2 minutes before transferring to a wire rack.
- Melt 1 cup of chocolate chips for the chocolate bottom in the microwave, stirring every 30 seconds.
- Press the bottom of each cooled cookie into the melted chocolate.
- Allow the chocolate-dipped cookies to set for about 20 minutes.
