  • 1 teaspoon Baking Soda avoid using baking powder without adjustments
  • ½ teaspoon Salt fine sea salt recommended
Butterscotch Filling
  • 1 cup Butterscotch Chips or chocolate chips for a fun twist
Chocolate Bottom
  • 1 cup Melting Chocolate milk or dark chocolate chips

Method
 

Baking Cookies
  1. Preheat your oven to 375°F (190°C) and line cookie sheets with parchment paper or silicone mats.
  2. Melt ½ cup of butter in the microwave for about 45 seconds.
  3. Stir in ¾ cup of brown sugar and ½ cup of granulated sugar until fully combined.
  4. Add 1 teaspoon of vanilla extract and 2 large eggs, mixing until smooth.
  5. In a separate bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking soda, and ½ teaspoon of salt. Stir into the wet ingredients until a thick dough forms.
  6. Fold in 1 cup of butterscotch chips into the cookie dough.
  7. Drop rounded balls of the cookie dough onto prepared sheets, spaced 2 inches apart.
  8. Bake for 9 minutes or until edges are slightly golden.
  9. Let cookies cool on the pan for 1-2 minutes before transferring to a wire rack.
  10. Melt 1 cup of chocolate chips for the chocolate bottom in the microwave, stirring every 30 seconds.
  11. Press the bottom of each cooled cookie into the melted chocolate.
  12. Allow the chocolate-dipped cookies to set for about 20 minutes.
