Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with nonstick spray.
  2. Cook bacon in a skillet over medium heat for 4-5 minutes until crispy, then transfer to the baking dish.
  3. Sprinkle half of the Gruyere and white cheddar over the bacon. Tear croissants into bite-sized pieces and scatter them over the cheese.
  4. Whisk together eggs, whole milk, heavy cream, sage, Dijon mustard, kosher salt, and black pepper in a bowl.
  5. Pour the egg mixture evenly over the croissants and cheese.
  6. Bake for 40-45 minutes until golden and set. If browning too quickly, cover with foil.
  7. Allow to cool for 5-10 minutes, then garnish with chives before serving.
