  • 1 cup Uncooked Quinoa Yields about 3 cups cooked.
For the Sauce
  • 2 tablespoons Miso Paste Choose white or yellow for milder flavor.
  • 2 tablespoons Tamari (or Coconut Aminos) Gluten-free alternative to soy sauce.
For the Flavor
  • 1 teaspoon Freshly Grated Ginger Adjust to taste for desired spice.
For the Richness
  • 1 tablespoon Coconut Oil Can substitute with neutral oil if desired.

Method
 

Cooking Instructions
  1. Rinse 1 cup of uncooked quinoa under cool running water for a couple of minutes. In a medium saucepan, combine rinsed quinoa with 2 cups of water. Bring to a boil, then reduce to low, cover, and simmer for about 15 minutes until fluffy.
  2. Remove the quinoa from heat and let it cool slightly for about 5 minutes. In a separate bowl, mix together 2 tablespoons of miso paste and 2 tablespoons of tamari. Stir this mixture into the warm quinoa.
  3. Grate 1 teaspoon of fresh ginger and gradually add to the quinoa mixture, mixing thoroughly.
  4. Add 1 tablespoon of coconut oil to the quinoa and stir until it melts and blends in.
  5. Taste and adjust seasoning if needed. Serve warm as a side dish or base for protein or veggies.
