Step-by-Step Instructions
  1. In a stand mixer, blend the softened cream cheese with sugar, vanilla extract, and ground cinnamon on medium speed until smooth and creamy, about 2-3 minutes.
  2. Take a large burrito-sized tortilla and spread 1/4 of the cream cheese mixture evenly on one side. Lay thin apple slices over half of the tortilla and fold to encase the filling.
  3. Melt 1 tbsp of melted butter in a skillet over medium-low heat. Cook the folded quesadilla for about 1-2 minutes until golden brown, then flip and cook for another 1-2 minutes.
  4. Brush the tops with melted butter and sprinkle generously with the cinnamon sugar mixture. Slice into wedges and serve warm.
