Step-by-Step Instructions
- In a stand mixer, blend the softened cream cheese with sugar, vanilla extract, and ground cinnamon on medium speed until smooth and creamy, about 2-3 minutes.
- Take a large burrito-sized tortilla and spread 1/4 of the cream cheese mixture evenly on one side. Lay thin apple slices over half of the tortilla and fold to encase the filling.
- Melt 1 tbsp of melted butter in a skillet over medium-low heat. Cook the folded quesadilla for about 1-2 minutes until golden brown, then flip and cook for another 1-2 minutes.
- Brush the tops with melted butter and sprinkle generously with the cinnamon sugar mixture. Slice into wedges and serve warm.

Notes
For best results, use room temperature cream cheese and adjust cooking time based on your stove's heat settings. This recipe can be easily doubled.
