Ingredients
  

Brownie Batter
  • 150 g Coconut Sugar Can be substituted with brown sugar.
  • 90 g Ground Almonds Can use ground seeds for nut-free option.
  • 60 g Cocoa Powder Ensure it's unsweetened.
  • 2 tbsp Flax Seeds Acts as an egg substitute; chia seeds work too.
  • 1 tsp Baking Powder
  • 0.25 tsp Baking Soda
  • pinch Salt Balances sweetness.
  • 50 g Dairy-Free Chocolate Chips Optional for extra richness.
  • 500 g Chickpeas Rinsed and drained.
  • 120 ml Plant-Based Milk
  • 80 g Nut or Seed Butter Choose your favorite.
  • 60 g Banana Or substitute with ¼ cup applesauce.
  • 2 tsp Vanilla Extract
Sweet Potato Frosting
  • 1 medium Cooked Sweet Potato Can be blended with spices.
  • 60 ml Coconut Cream
  • 2-3 tbsp Maple Syrup Adjust sweetness to taste.
  • 1 tsp Vanilla Extract

Method
 

Brownies Preparation
  1. In a food processor, combine the rinsed chickpeas with plant-based milk, nut or seed butter, banana or applesauce, and vanilla extract. Blend until smooth and creamy.
  2. Add cocoa powder, ground almonds, flax seeds, baking powder, baking soda, and salt to the wet batter. Pulse until a homogenous batter forms. Fold in chocolate chips if desired.
  3. Preheat your oven to 355°F (180°C) and prepare a baking dish with parchment paper or grease lightly.
  4. Pour the brownie batter into the prepared baking dish and spread evenly. Bake for 35-40 minutes until a toothpick comes out mostly clean.
  5. Allow the brownies to cool in the pan for 30-40 minutes before lifting out and slicing into squares.
Frosting Preparation
  1. For optional frosting, blend cooked sweet potato, coconut cream, maple syrup, and vanilla extract until smooth and creamy.
