Preparation Steps
  1. Gather all the ingredients: sour cream, fresh cilantro, a garlic clove, fresh lime, and kosher salt.
  2. Rinse the cilantro under cold water to remove dirt, then pat it dry with a paper towel.
  3. Peel the garlic and set aside. Cut the lime in half to access both the juice and zest.
  4. In a food processor, add the sour cream, cilantro leaves, finely chopped garlic, lime zest, and juice, and sprinkle in kosher salt.
  5. Blend on high speed for 30-45 seconds until smooth and creamy.
  6. Scrape down the sides as needed and continue blending until fully smooth.
  7. Adjust the consistency by adding water or an extra spoonful of sour cream if needed.
  8. Transfer to an airtight container, seal tightly, and refrigerate for at least 30 minutes before serving.
