Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add onion and bell pepper, sauté for 3-4 minutes. Add spinach and sauté for another 2-3 minutes.
  3. In a mixing bowl, whisk together eggs and milk until smooth. Incorporate cottage cheese, Italian seasoning, salt, and pepper. Fold in cheddar cheese and sautéed vegetables.
  4. Grease a 9-inch pie dish with olive oil. Pour the filling into the dish and smooth the top. Bake for 40-45 minutes until golden brown and a knife comes out clean.
  5. Remove from the oven and cool for 10 minutes. Cut into wedges and serve warm.
