Steps
  1. Prepare the Yogurt-Feta Sauce: In a food processor, blend together feta cheese and plain whole-milk yogurt until smooth. Season with salt and pepper. Whisk lemon zest, lemon juice, sumac, and olive oil in a bowl, and toss cucumber ribbons in the dressing.
  2. Set Up the Grill: Preheat your grill to medium-high heat and oil the grates with canola oil.
  3. Grill the Vegetables: Brush eggplant slices with olive oil, season with salt and pepper, and grill for 6-8 minutes. Grill the red pepper for 5-6 minutes until charred, then slice.
  4. Toast the Buns: Place the buns cut-side down on the grill for about 1 minute until golden brown.
  5. Assemble the Burgers: Spread the yogurt-feta sauce on the bottom half of each bun, layer with grilled eggplant, red pepper strips, cucumber ribbons, and cap with the top bun.
