Blueberries
  • ½ cup fresh blueberries Can use frozen, but fresh is preferable

Method
 

Directions
  1. In a mason jar, combine vinegar, honey, and lemon juice. Whisk until honey dissolves.
  2. In a bowl, mash the blueberries using a stick blender or fork until chunky.
  3. Add mashed blueberries to the mason jar, then pour in olive oil. Seal and shake until combined.
  4. Taste and adjust seasoning with salt and pepper; shake to mix.
  5. Serve over salads or store in the fridge for up to a week.
