Shrimp Filling
  • 1 pound peeled and deveined shrimp fresh is best for optimal taste
  • 1 medium onion chopped; green onions can be a milder substitute
  • 1 tablespoon extra virgin olive oil perfect for sautéing
  • 1 tablespoon taco seasoning or mix of garlic powder, paprika, and cumin
Crunchy Slaw
  • 2 cups green cabbage shredded; purple cabbage can be used instead
  • 1/2 cup ranch dressing for drizzling; Buttermilk Ranch or dairy-free versions available
Taco Assembly
  • 8 pieces corn tortillas or flour tortillas if gluten isn't a concern
  • 2 pieces lime wedges for spritzing
  • 1/4 cup chopped cilantro optional

Method
 

Cooking Instructions
  1. Heat 1 tablespoon of extra virgin olive oil in a large skillet over medium heat.
  2. Add 1 chopped onion and sauté for about 2 minutes until translucent.
  3. Add 1 pound of peeled and deveined shrimp to the pan, cooking for about 3–5 minutes until pink and opaque.
  4. Sprinkle in the taco seasoning and add 1/8 to 1/4 cup of water, stirring to combine.
  5. Let it simmer on low heat for another 2–3 minutes to thicken the sauce.
  6. Meanwhile, heat a separate skillet over medium heat and warm the corn tortillas for about 30 seconds on each side.
  7. Assemble the tacos by placing a warmed tortilla on a plate, adding the shrimp mixture, topping with green cabbage and ranch dressing.
