Cooking Instructions
- Heat 1 tablespoon of extra virgin olive oil in a large skillet over medium heat.
- Add 1 chopped onion and sauté for about 2 minutes until translucent.
- Add 1 pound of peeled and deveined shrimp to the pan, cooking for about 3–5 minutes until pink and opaque.
- Sprinkle in the taco seasoning and add 1/8 to 1/4 cup of water, stirring to combine.
- Let it simmer on low heat for another 2–3 minutes to thicken the sauce.
- Meanwhile, heat a separate skillet over medium heat and warm the corn tortillas for about 30 seconds on each side.
- Assemble the tacos by placing a warmed tortilla on a plate, adding the shrimp mixture, topping with green cabbage and ranch dressing.
