Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine 2 cups of all-purpose flour, 1 teaspoon of salt, ½ teaspoon of ground black pepper, 1 tablespoon of baking powder, ½ teaspoon of baking soda, and 2 tablespoons of light brown sugar. Whisk to blend thoroughly.
  3. Add ½ cup of very cold unsalted butter, cubed. Cut the butter into the dry ingredients until it resembles coarse meal.
  4. In a separate bowl, whisk together 1 large room temperature egg, ¾ cup of plain full-fat yogurt, and ¼ cup of whole milk until smooth. Pour into the dry ingredients and stir gently until just moistened.
  5. Fold in 1 cup of shredded cheddar cheese, 1 cup of diced ham, and ¼ cup of chopped scallions.
  6. On a lightly floured surface, shape the dough into an 8-inch circle about 1-inch thick. Cut into 8 wedges.
  7. Transfer the scone wedges onto the prepared baking sheet, spacing them 2 inches apart. Brush the tops with milk for a golden finish and sprinkle with extra toppings if desired.
