Method
 

Step-by-Step Instructions
  1. Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.
  2. Grind granulated sugar and dried lavender in a coffee grinder until fine.
  3. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  4. Stir in lavender sugar and remaining granulated sugar.
  5. Cut in cold, diced butter until it resembles pea-sized pieces.
  6. Pour in buttermilk and mix until just combined.
  7. Transfer dough to floured surface, pat down to 1 inch thick and cut out biscuits.
  8. Chill biscuits on baking sheet in the freezer for 10 minutes.
  9. Optional: Brush tops with milk and sprinkle with coarse sugar.
  10. Bake for 12–15 minutes until golden brown.
  11. Allow to cool on a wire rack for a few minutes before serving.
