Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
  3. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy, about 2–3 minutes.
  4. Add the egg, vanilla extract, peppermint extract, and green food coloring to the butter-sugar mixture and mix until smooth.
  5. Gradually mix the dry ingredient mixture into the wet ingredients until just combined.
  6. Gently fold in the crushed Mint Oreos using a spatula.
  7. Cover the dough with plastic wrap and refrigerate for at least one hour.
  8. Use a cookie scoop to portion the dough onto the prepared baking sheets, leaving space between each.
  9. Bake for 11–12 minutes until the edges are golden and centers are soft.
  10. Allow cookies to cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
