- Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with aluminum foil or spray it with cooking spray.
- Melt 1/2 cup of butter in a microwave-safe bowl for about 1 minute and let it cool slightly.
- Whisk 1/2 cup granulated sugar, 1/2 cup light brown sugar, and 1 teaspoon vanilla extract into the melted butter until smooth.
- Stir in 1 cup all-purpose flour, 1 cup old-fashioned rolled oats, and a pinch of salt until just combined. Reserve 1 heaping cup.
- Press the remaining mixture into the bottom of the prepared pan to form a 1/4-inch thick crust.
- Spread 1 cup raspberry preserves evenly over the pressed crust.
- Sprinkle the reserved crumble mixture over the raspberry preserves and press gently.
- Bake for 30 minutes until golden brown, then let cool in the pan for at least 2 hours before slicing.
