Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with aluminum foil or spray it with cooking spray.
  2. Melt 1/2 cup of butter in a microwave-safe bowl for about 1 minute and let it cool slightly.
  3. Whisk 1/2 cup granulated sugar, 1/2 cup light brown sugar, and 1 teaspoon vanilla extract into the melted butter until smooth.
  4. Stir in 1 cup all-purpose flour, 1 cup old-fashioned rolled oats, and a pinch of salt until just combined. Reserve 1 heaping cup.
  5. Press the remaining mixture into the bottom of the prepared pan to form a 1/4-inch thick crust.
  6. Spread 1 cup raspberry preserves evenly over the pressed crust.
  7. Sprinkle the reserved crumble mixture over the raspberry preserves and press gently.
  8. Bake for 30 minutes until golden brown, then let cool in the pan for at least 2 hours before slicing.
