Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare the chicken by removing the backbone.
  2. Flatten the chicken halves skin-side up by pressing down on the breastbone.
  3. Dry the chicken with paper towels and loosen the skin, inserting butter underneath.
  4. Combine olive oil, salt, pepper, garlic powder, and thyme in a bowl and rub on the chicken.
  5. Place chicken in the roasting pan and roast at 400°F (200°C) for 20 minutes.
  6. Lower the temperature to 350°F (175°C) and continue roasting for an additional 30 minutes, basting halfway.
  7. Check the internal temperature to reach 165°F (74°C) in the thickest part of the breast.
  8. Let the chicken rest for 10 minutes before carving and serving warm.
