- In a skillet over medium heat, melt 2 tablespoons of butter. Sauté diced celery, onion, red bell pepper, and minced garlic for about 5 minutes, or until the vegetables are tender and fragrant. Stir in 4 ounces of cream cheese until melted and smooth, then combine with cooked rice, stuffing mix, baby shrimp, imitation crab meat, and a splash of broth in a large mixing bowl.
- Preheat your oven to 325°F (160°C). Place 4 fresh salmon fillets skin-side down on a cutting board, and cut a slit lengthwise in each fillet. Season with salt and pepper.
- Using a spoon, gently fill each slit in the salmon fillets with about ¼ cup of the prepared stuffing mixture. Place a small knob of butter on top of each stuffed salmon.
- Line a baking sheet with parchment paper and place the stuffed salmon fillets on top. Bake for about 30 minutes, or until the salmon flakes easily with a fork and reaches 125°F (52°C).
