  • 3 whole Eggs Flax eggs as a vegan alternative.
  • 2 tablespoons All-purpose flour Gluten-free flour can be used.
For the Cheese Topping
  • 1/2 cup Feta, crumbled Goat cheese can be an alternative.
  • 1 cup Kasseri or mozzarella, grated Any melting cheese will work.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (180°C). Gather your ingredients while the oven warms up.
  2. Heat 2 tablespoons of olive oil in a medium skillet over medium heat. Sauté the diced onion for 5-7 minutes until tender.
  3. Stir in the sliced green onions and chopped spinach. Sauté for 3-4 minutes until spinach wilts. Add dill, parsley, salt, and pepper.
  4. Transfer the sautéed spinach mixture into a 6-cup baking dish, spreading it evenly.
  5. In a food processor, combine 1 cup of milk, 3 eggs, and 2 tablespoons of flour. Blend until smooth, about 30 seconds.
  6. Pour the custard over the spinach mixture. Sprinkle feta and grated cheese on top.
  7. Bake in the preheated oven for 20-30 minutes until the top is golden brown and slightly jiggles.
