Method
 

Step-by-Step Instructions

  2. Brush the portobello mushrooms with olive oil and season with salt and pepper, gill side up on the baking sheet.
  3. Sauté minced garlic in olive oil for 1 minute, then add spinach and cook until wilted, about 2-3 minutes.
  4. Mix sautéed garlic and spinach with cherry tomatoes, breadcrumbs, parmesan cheese, and Italian seasoning in a large bowl.
  5. Stuff each mushroom cap with the filling and top with shredded mozzarella cheese.
  6. Bake in the preheated oven for about 15-18 minutes until tender and cheese is bubbly and browned.
  7. Garnish with chopped basil or parsley before serving.
