  • 1/2 cup Cashew Butter stir until smooth and runny
  • 1/4 cup Maple Syrup adjust if using sweetened yogurt
  • 1/4 cup Protein Powder vanilla-flavored recommended
  • 1 teaspoon Vanilla Extract
  • 1 pinch Salt
For the Chocolate Coating
  • 1 cup Chocolate Chips Enjoy Life chocolate chips recommended
  • 2 tablespoons Coconut Oil
For the Topping
  • 2 tablespoons Cacao Nibs

Method
 

Step-by-Step Instructions
  1. In a medium bowl, combine thick Greek yogurt, creamy cashew butter, maple syrup, protein powder, vanilla extract, and a pinch of salt. Whisk vigorously for about 2-3 minutes until the mixture is completely smooth and free of lumps.
  2. Grab silicone molds or lined ice cube trays and carefully fill each cavity about two-thirds full with the yogurt mixture. Gently press cacao nibs into the top of each filled mold.
  3. In a microwave-safe bowl, combine chocolate chips and coconut oil. Heat the mixture in 30-second intervals, stirring after each round, until smooth and fully melted, about 1-2 minutes total.
  4. Once the chocolate is melted, carefully pour it over each yogurt-filled mold, completely covering the yogurt mixture.
  5. Place the filled molds into the freezer and allow them to chill for 3-4 hours, or until solid.
  6. Once frozen, carefully remove the Vegan Frozen Yogurt Bites from the molds. Store the bites in an airtight container in the freezer.
