Step-by-Step Instructions
  1. Cook the Bacon: In a large skillet, heat over medium heat and add the chopped bacon. Cook for about 5–7 minutes, until crisp and golden. Remove with a slotted spoon.
  2. Sauté the Onions: In the same skillet, add diced onion and sauté for 3–4 minutes until soft and translucent.
  3. Make the Sauce: Add chopped bacon, diced tomatoes, water, chipotle, lime juice, and kosher salt. Stir and simmer for about 10 minutes until thickened.
  4. Add the Eggs: Stir in half of the cilantro, crack eggs into the sauce, cover, and cook for 6–10 minutes until whites are set but yolks remain runny.
  5. Warm the Tortillas: Heat another skillet over medium and warm tortillas for 1–2 minutes on each side.
  6. Serve and Garnish: Remove from heat, top with remaining cilantro and Cheddar cheese, serve with warm tortillas and optional garnishes.
