- Cook the Bacon: In a large skillet, heat over medium heat and add the chopped bacon. Cook for about 5–7 minutes, until crisp and golden. Remove with a slotted spoon.
- Sauté the Onions: In the same skillet, add diced onion and sauté for 3–4 minutes until soft and translucent.
- Make the Sauce: Add chopped bacon, diced tomatoes, water, chipotle, lime juice, and kosher salt. Stir and simmer for about 10 minutes until thickened.
