Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together almond flour, shredded coconut, and baking soda.
- In another bowl, whisk eggs, honey or maple syrup, and vanilla extract until frothy.
- Gently fold the wet ingredients into the dry mixture until combined.
- Scoop dough onto the baking sheet, spacing them about 2 inches apart.
- If using, sprinkle chocolate chips or nuts on top of each mound.
- Bake for 10 to 12 minutes until edges are golden brown, but centers look slightly underbaked.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
