Preparation Steps
- In a medium bowl, mix together quick oats, non-dairy milk, pistachio butter, maple syrup, and vanilla extract. If using, add matcha powder. Stir well until blended and no clumps remain.
- Check the consistency of the mixture; it should be smooth and creamy.
- Cover the bowl tightly with plastic wrap or transfer to individual jars with lids. Refrigerate for at least 4 hours, preferably overnight.
- The next morning, stir the overnight oats. If too thick, drizzle in more non-dairy milk until desired consistency is reached.
- Spoon vegan yogurt on top, sprinkle with chopped pistachios, and add fresh raspberries or other fruits if desired.
