  • 1 cup Unsalted Butter Softened
  • 2 cups All-Purpose Flour Can substitute with gluten-free blend
  • 0.75 cup Granulated Sugar Brown sugar can be used for deeper flavor
  • 1 large Egg Room temperature
For the Filling
  • 1 jar Seedless Raspberry Jam 9-12 ounces; can substitute with other jams

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Gather ingredients and equipment.
  2. In a large mixing bowl, combine the softened butter, flour, sugar, and egg using an electric mixer on low for 2-3 minutes.
  3. Reserve 1½ cups of the crumbly mixture and press the remaining into the bottom of the greased baking dish.
  4. Spread the raspberry jam evenly over the pressed crust layer.
  5. Crumble the reserved mixture over the jam evenly, pressing lightly.
  6. Bake in the preheated oven for 30-40 minutes or until the top is golden brown.
  7. Let the bars cool in the baking dish for about 10-15 minutes before cutting into squares.
