  • 1/2 cup Brown Sugar Light brown sugar works as a substitute
  • 2 medium Bananas Very ripe
  • 2 large Eggs Can substitute with flax eggs
  • 1/3 cup Oil Vegetable or melted butter
  • 1 teaspoon Vanilla Extract Use pure extract
  • 2 cups Flour Use whole wheat for added fiber
  • 1 tablespoon Baking Powder Ensure freshness
  • 1 teaspoon Spices (Cinnamon, Nutmeg, Ginger) Adjust to taste
  • 1 cup Walnuts/Pecans Can be omitted or substituted with seeds
For the Crumb Topping
  • 1/4 cup Brown Sugar
  • 1/2 cup Walnuts/Pecans Chopped
  • 1/2 cup Flour Regular or whole wheat
  • 1/4 cup Melted Butter Can substitute with coconut oil
  • 1 teaspoon Cinnamon Adjust for spiciness

Method
 

Steps
  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin.
  2. Coat diced pears in granulated and brown sugar and set aside.
  3. Mix flour, baking powder, salt, and spices in a bowl.
  4. Mash bananas and mix with eggs, oil, and vanilla until smooth.
  5. Combine wet and dry ingredients gently.
  6. Fold in the pears and nuts.
  7. Fill muffin cups three-quarters full with batter.
  8. Mix crumb topping ingredients and sprinkle over muffins.
  9. Bake for 25-30 minutes until golden.
  10. Cool for 5 minutes before transferring to a rack.
