  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs room temperature

  • 1 3/4 cups cake flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 1/2 cup milk
For the Whipped Topping
  • 1 cup heavy whipping cream
For the Filling
  • 1/2 cup peach jam
For Garnishing
  • 1 medium fresh peach sliced

Method
 

Baking
  1. Preheat your oven to 350°F (175°C) and line a muffin pan with cupcake liners.
  2. In a large mixing bowl, beat together the butter, brown sugar, granulated sugar, and eggs until smooth. Add vanilla extract.
  3. In a separate bowl, whisk together the cake flour, baking powder, and kosher salt.
  4. Gradually mix the dry ingredients into the wet mixture, alternating with the milk.
  5. Fill the cupcake liners halfway with batter and bake for about 20 minutes.
  6. Allow the cupcakes to cool in the pan for 5 minutes, then transfer to a wire rack.
  7. Core each cupcake and fill with peach jam.
  8. Whip the heavy cream until stiff peaks form and top each cupcake.
  9. Garnish with fresh peach slices.
