For the Crust
  • 2 cups Crushed Pretzels gluten-free can be used
  • 1/2 cup Powdered Sugar granulated sugar can be a substitute
  • 1/2 cup Melted Butter vegan butter can be a substitute
For the Filling
  • 8 oz Cream Cheese Neufchâtel cheese can be used
  • 8 oz Whipped Topping homemade whipped cream can be used
  • 1 Pasteurized Egg optional for added richness
For the Gelatin Layer
  • 1 pkg Peach Gelatin can use flavored gelatin or fruit purees
  • 2 cups Sliced Peaches fresh is best but canned or frozen works

Method
 

Step-by-Step Instructions
  1. Preheat oven to 350°F (175°C). In a bowl, combine crushed pretzels, powdered sugar, and melted butter. Press into a 9x13 inch dish and bake for about 10 minutes. Let cool.
  2. In a mixing bowl, beat cream cheese and powdered sugar until smooth. Fold in whipped topping. Spread over cooled pretzel crust.
  3. Boil 2 cups of water. Remove from heat and whisk in peach gelatin until dissolved. Allow to cool slightly and fold in sliced peaches.
  4. Pour peach gelatin mixture over cream cheese layer and spread evenly. Remove air bubbles with a toothpick if needed.
  5. Cover and refrigerate for at least 4 hours to set.
  6. If using, beat a pasteurized egg into cream cheese mixture before layering.
  7. Once set, slice into squares and serve chilled, garnished with extra whipped topping or peach slices if desired.

Notes

Allow at least 4 hours of chilling time for best results. Cream cheese should be softened to prevent lumps.
