  • 1 pound boneless, skinless chicken breasts or thighs Diced
  • 2 tablespoons lemon juice Fresh
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh herbs (parsley, oregano, thyme) Chopped
For the Rice
  • 1 cup long grain white rice Uncooked
  • 1 cup grated zucchini Optional
  • 2 cups chicken broth Low-sodium recommended

Method
 

Steps
  1. Preheat your oven to 375°F (190°C).
  2. Grease a 9 x 13-inch baking dish with extra virgin olive oil.
  3. In a large mixing bowl, toss the diced chicken with lemon juice, olive oil, fresh herbs, and any desired spices until thoroughly coated.
  4. Allow the marinated chicken to rest for about 30 minutes.
  5. In the same baking dish, stir in the uncooked rice, grated zucchini, and chicken broth.
  6. Cover the baking dish tightly with aluminum foil.
  7. Place the covered baking dish in the preheated oven and bake for 45-50 minutes.
  8. Once baking is complete, carefully remove the foil and fluff the rice with a fork.
  9. Top with tzatziki sauce and garnish with fresh herbs before serving.
