- In a large mixing bowl, shred the rotisserie chicken into bite-sized pieces. Add diced celery, finely chopped onion, chopped parsley, dill, mayonnaise, Dijon mustard, and lemon juice. Stir vigorously until all ingredients are well combined.

- After chilling, slice the croissants in half horizontally without cutting all the way through.
