  • 1 lb Lean Ground Beef can substitute with ground turkey
  • 2 tbsp Chili Powder for spiciness
  • 1 tbsp Cumin
  • 1 tsp Garlic Powder or use fresh minced garlic
  • 1 tsp Paprika smoked paprika for a twist
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 0.5 tsp Cayenne Pepper optional, to taste
  • 2 cloves Minced Garlic fresh
  • 1 medium White Onion or red onion
  • 1 cup Green Peppers diced
  • 2 medium Russet Potatoes diced
  • 1 cup Salsa no-sugar-added
  • 4 oz Mild Green Chiles or jalapeños for more spice
  • 0.5 cup Sliced Black Olives optional
  • 1 can Diced Tomatoes drained
  • 2 large Eggs beaten
Optional Toppings
  • 1 medium Sliced Avocado for serving
  • 0.5 cup Dairy-Free Sour Cream for serving
  • Fresh Cilantro optional for garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Gather your ingredients.
  2. In a large skillet, cook the lean ground beef over medium heat until browned, about 5-7 minutes. Add minced garlic and diced onion.
  3. In a separate large casserole dish, combine diced green peppers, russet potatoes, salsa, mild green chiles, sliced black olives, and diced tomatoes.
  4. Stir in chili powder, cumin, garlic powder, paprika, salt, black pepper, and optional cayenne pepper into the beef mixture.
  5. Transfer the seasoned beef mixture into the casserole dish with the vegetables. Stir in beaten eggs.
  6. Cover the casserole dish with foil and bake for 45 minutes to 1 hour, until the potatoes are fork-tender.
  7. Let cool for a few minutes before serving with optional toppings.
