  • 3 cloves Garlic minced
  • 2 tablespoons Thai Red Curry Paste adjust according to spice preference
  • 4 cups Chicken or Vegetable Broth homemade or store-bought
  • 1 cup Water or replace with more broth for richer flavor
  • 1 tablespoon Lime Juice fresh lime juice is preferred
For the Noodles
  • 4 ounces Uncooked Rice Noodles or substitute with any other noodles
For the Creamy Finish
  • 1 can Coconut Milk full-fat for best texture
  • 2 cups Shredded Cooked Chicken preferably rotisserie
For the Fresh Garnish
  • 1 handful Fresh Basil or Thai basil
  • 1 handful Fresh Cilantro or replace with parsley
  • 2 Chopped Scallions for garnish
Seasoning and Serving

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil over medium heat for about 2 minutes. Add chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in 1 tablespoon of grated ginger and 3 minced garlic cloves. Add 2 tablespoons of red curry paste; cook for 2-3 minutes until fragrant.
  3. Pour in 4 cups of broth and 1 cup of water, followed by juice of 1 lime. Bring to a gentle boil, about 5 minutes.
  4. Add 4 ounces of rice noodles; stir to combine. Let the noodles soften.
  5. Reduce heat; stir in 1 can of coconut milk and 2 cups of shredded chicken. Simmer for about 10 minutes.
  6. Stir in fresh basil, cilantro, and scallions. Season with salt and pepper; serve with lime wedges.
