- In a large mixing bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking soda, and your mix of spices with a pinch of fine sea salt.
- In a separate bowl, cream together 3/4 cup of unsalted butter and 1 cup of packed brown sugar until light and fluffy, about 3-4 minutes.
- Add in one room temperature egg and 1/4 cup of unsulfured molasses, mixing until smooth.
- Gradually blend the dry ingredients into the wet until fully combined.
- Pre-scoop the dough into 1.5-inch balls and place them on a lined cookie sheet. Cover the cookie sheet and refrigerate for at least 3 hours.
- Preheat your oven to 350°F (175°C). Roll each chilled dough ball in granulated sugar.
- Place the sugared balls on a lined baking sheet, and using your thumb, press down to create an imprint in each ball.
- Bake the cookies for 9-10 minutes until they are set but still appear soft.
- Once cooled, melt 1 cup of white chocolate, stirring in 1/4 cup of eggnog until smooth, then fill the thumbprints.
