  1. Gather all your ingredients for the dressing. Peel and chop the carrots and onion, and peel a chunk of fresh ginger.
  2. In a high-speed blender, combine the prepared carrots, onion, ginger, granulated sugar, soy sauce, rice vinegar, and salt. Blend on high for about 30 seconds until thick and smooth.
