Step-by-Step Instructions
- In a large skillet over medium-low heat, melt 1 tablespoon of butter and 1 tablespoon of olive oil. Add 2 thinly sliced yellow onions, cooking gently for 15-20 minutes until caramelized.
 - Stir in 2 cloves of minced garlic and 1 teaspoon of chopped fresh thyme. Cook for about 1-2 minutes until fragrant.
 - Push the onions to the side and add 1 pound of ground beef, cooking until browned and fully cooked, roughly 5-7 minutes.
 - Mix in 1 tablespoon of Worcestershire sauce and sprinkle 2 tablespoons of flour over the beef. Stir and cook for an additional 1-2 minutes.
 - Pour in 1 cup of beef broth and bring the mixture to a gentle simmer for about 5 minutes, stirring occasionally.
 - Remove from heat and stir in 1 cup of shredded provolone or Swiss cheese until melted completely.
 - Toast hamburger buns and spoon generous amounts of the beef mixture onto each bun. Serve immediately.

Notes
Caramelization is key for the onions. Toasting the buns helps prevent sogginess. The beef mixture can be prepared ahead of time and stored in the fridge for up to 3 days.
