- Grate the tomatoes using a box grater over a bowl to catch the juice, discarding the skins.
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add garlic and sauté for 1 minute until fragrant.
- Stir in the grated tomatoes and bring to a gentle simmer. Cover vented and simmer for 15 minutes.
- If desired, stir in 1 tablespoon of tomato paste for thickness and simmer for another 5 minutes.
- Season with kosher salt, black pepper, and balsamic vinegar if desired. Taste and adjust.
- Cook pasta in salted boiling water according to package directions. Reserve ½ cup of pasta water, then drain.
- Add hot, drained pasta to sauce, toss with fresh basil and Parmesan cheese. Adjust consistency with reserved pasta water if necessary.
- Plate and garnish with more basil, cheese, and black pepper before serving.
