Method
 

Step-by-Step Instructions
  1. Grate the tomatoes using a box grater over a bowl to catch the juice, discarding the skins.
  2. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add garlic and sauté for 1 minute until fragrant.
  3. Stir in the grated tomatoes and bring to a gentle simmer. Cover vented and simmer for 15 minutes.
  4. If desired, stir in 1 tablespoon of tomato paste for thickness and simmer for another 5 minutes.
  5. Season with kosher salt, black pepper, and balsamic vinegar if desired. Taste and adjust.
  6. Cook pasta in salted boiling water according to package directions. Reserve ½ cup of pasta water, then drain.
  7. Add hot, drained pasta to sauce, toss with fresh basil and Parmesan cheese. Adjust consistency with reserved pasta water if necessary.
  8. Plate and garnish with more basil, cheese, and black pepper before serving.
