- In a medium mixing bowl, combine Greek yogurt, peanut butter, honey or maple syrup, and vanilla extract. Blend until smooth and creamy.
- Gently fold in mini chocolate chips along with any optional mix-ins like chia seeds and chopped nuts.
- Line a baking sheet with parchment paper. Drop dollops of the mixture onto the sheet, spaced about 1-2 inches apart.
- Place the baking sheet in the freezer for a minimum of 2 hours or until bites are completely solid.
- Once frozen, transfer bites to an airtight container for storage, layering parchment paper if stacking.
